4 chicken breast halves, boneless and skinless, approximately 2 lbs.
2 tablespoons Tuscan Herb Olive Oil
Juice and zest from 1 lemon
4 cloves of garlic, peeled and chopped
3 tablespoons fresh flat leaf parsley, chopped, plus sprigs for garnish
3 tablespoons fresh thyme, chopped, plus sprigs for garnish
2 tablespoons fresh rosemary, chopped, plus sprigs for garnish
1/4 tsp salt
1/4 tsp pepper
Products You Will Need:
Place chicken breasts in a medium size baking dish. Set aside. In a medium bowl, place all ingredients except chicken breasts and mix thoroughly. Spread mixture over each chicken breast. Cover and refrigerate for about 30 minutes. Heat outdoor grill, grill pan or pre-heat oven. Remove chicken from mixture and pat with paper towels to remove excess moisture.
To Grill: grill until chicken feels firm to the touch and juices run clear, turning once.
To Bake: bake at 350 degrees for 30 minutes or until firm and juices run clear.
