Ingredients For Squash Prep:
Nonstick cooking spray, for greasing the baking sheet
2 acorn squash
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
pumpkin seeds (pepitas)
Ingredients For Agrodolce:
1/2 cup balsamic vinegar
2 cloves garlic, peeled and smashed
4 sprigs fresh thyme
3 tablespoons honey, such as acacia
3 tablespoons unsalted butter, at room temperature
Preheat the oven to 400 degrees F. Grease a baking sheet with cooking spray.
Cut the acorn squash in half; scoop out the seeds and discard. Slice the squash into 1- inch slices. Toss with the olive oil and season with salt and pepper. Place on the prepared baking sheet and roast until tender and golden brown, about 30 minutes. Remove the peel and dice the squash.
Assembly Instructions For Agrodolce:
Combine the vinegar, garlic and thyme in a small saucepan. Bring to a simmer over medium heat. Continue to simmer until reduced by half, about 5 minutes. Add the honey and simmer until the mixture has thickened slightly, another 3 to 4 minutes. Stir in the butter and set aside.
In a large bowl, toss the squash with the agrodolce sauce, thyme and pumpkin seeds (pepitas). Serve hot or at room temperature.
