Blueberry, Lemon Olive Oil, Banana Bread
2 cup all-purpose flour
1/4 teaspoon salt
1-1/2 teaspoons baking powder
1 cup mashed very ripe bananas (about 2)
1 teaspoon vanilla
3 tablespoons Evergreen's Lemon fused extra virgin olive oil
3/4 cup sugar
1 large eggs, lightly beaten
1-1/3 cups fresh blueberries

Preheat the oven to 350. Thoroughly grease and flour a standard (9x5) loaf pan.
In a medium bowl, mix flour, baking powder and salt.
In a large bowl, whisk sugar, olive oil, egg, vanilla, and mashed bananas until smooth. Add in flour mixture and combine gently.
Fold in blueberries using a spatula, then pour into prepared pan. Bake 55 minutes and cover half way through with tin foil so as not to brown too much. Test with a toothpick near the center for doneness. Cool in pan for 10 minutes
Turn onto rack to cool completely
