Ingredients for Shaved Asparagus Salad:
Raw Asparagus- a fresh bunch with thin stems
3 Thinly slice shallots
1/4 Cup Equal part of Balsamic Vinegar and Olive Oil
Using a potato peeler shave your asparagus carefully into a bowl
Thinly slice or use a mandolin slicer to slice your shallots.
Arrange ribbons of raw asparagus and thinly sliced shallots on a plate.
In a small cup, combine equal parts of Evergreen's Lemon olive oil and white balsamic vinegar.
Drizzle the vinaigrette over the asparagus. Top it off with shavings of Grana Padano. Serve your Shaved Asparagus Salad immediately.
