Simple Healthy Halibut Dinner
4 Halibut steaks, 5-7 ounces each
6 tablespoons Basil Infused Olive Oil, plus a little extra to coat baking dish
2 tablespoons Honey Ginger Balsamic Vinegar
2 cloves of garlic, peeled
1 cup fresh mint, chopped, plus extra for garnish
1-2 lemons, cut into slices
salt and pepper to taste
Products You Will Need:
Preheat oven to 450°. Coat the bottom of a baking pan with Basil Olive Oil and layer lemon slices on the bottom of the pan. Sprinkle both sides of the steaks with salt and pepper and place in the pan.
Bake about 10-12 minutes. The fish will appear opaque when done.
While the fish is baking, combine Basil Olive Oil, Honey Ginger Balsamic Vinegar, garlic and fresh mint in a blender or food processor. Pulse until smooth. Taste and add salt and pepper if needed.
Place a large spoonful of sauce on individual plates and top with fish, mint and a slice of lemon. Serve Immediately.
