Ingredients for Lemon Blueberry Couscous Salad:

-1 cup couscous
-1/2 cup fresh blueberries
-1/2 cup toasted coarsely shopped pecans
-1/4 cup freshly grated Parmesan cheese
-1 tablespoon capers
-Handful of coarsely chopped fresh parsley
-3 tablespoons Blueberry Balsamic Vinegar Reduction
-3 tablespoons Lemon Olive Oil

Lemon Fused Olive Oil

Cooking Instructions:

Prepare couscous in advance and allow it to cool. In a small bowl, lightly whisk together couscous, blueberries, pecans, parmesan, capers, and parsley. Add a little lemon zest for extra freshness. Drizzle Blueberry Balsamic and Lemon Olive Oil over mixture and stir. Serve the Lemon Blueberry Couscous Salad immediately
