Wild Mushroom & Sage Quiche

Ingredients for Wild Mushroom & Sage Quiche:

3 cups zucchini, skin on, grated, approximately 3 medium zucchini
1/2 cup Mushroom and Sage Olive Oil, plus a few tablespoons to coat the baking dish
4 eggs, beaten
1 cup all-purpose flour
2 teaspoons baking powder
1/2 cup red onion, chopped
1/2 cup parmesan cheese, grated
2 tsp fresh basil
2 tsp fresh oregano
2 teaspoons chopped chives and some to garnish plate
salt and pepper to taste

Wild Mushroom & Sage Infused Olive Oil

Cooking Instructions:
Preheat oven to 350 degrees. Coat a medium shallow baking pan with a drizzle of Mushroom and Sage Olive Oil. Set aside. Using a hand grater or food processor, grate zucchini. In a large bowl, place zucchini and the remainder of the ingredients and mix thoroughly.
Pour into baking dish. Bake for 25-30 minutes or until center springs back. If top needs more browning, place under broiler for 1-2 minutes. Garnish with extra chopped chives.
